Ingredients

  • 1 1/2 to 2 pounds lamb
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 1 bunch rosemary

 

Instructions

Season lamb with olive oil, salt pepper and rosemary. Grill 3 minutes on each side and cook in 350ºF oven for 15 to 18 minutes. 3 tablespoons olive oil 1/4 cup orzo 2 cups rice 1/4 cup pine nuts 41/2 cups chicken stock 2 tablespoons salt 1/4 cup raisins 1/4 cup apricots 1/4 cup prunes 3 tablespoons mint Sauté orzo in olive oil for 1 minute. Add rice and pine nuts and sauté 2 more minutes. Add chicken stock and salt and cover; cooking 15 to 18 minutes on low heat. Add fruits and remove from heat. Serve lamb with rice and mint.
