  • 4 cups Golden Grahams, crushed
  • 1/8 teaspoon cinnamon
  • 2/3 cup peanut butter chips
  • 2/3 cup chocolate chips
  • 1/2 cup walnuts, chopped coarsely
  • 2/3 cup Caprine Estates Cajeta
  • 1 tablespoon molasses
  • 1 teaspoon vanilla
  • Filling:
  • 2/3 cup Caprine Estates Plain Fromage de Chevre
  • 2/3 cup cajeta
  • 21/2 tablespoons lemon juice
  • 1 teaspoon vanilla
  • 1/4 cup walnuts, chopped



Crust: Preheat oven to 325ºF. Grease 9-inch square baking pan. Mix Golden Grahams, cinnamon, peanut butter chips, chocolate chips and walnuts together in large bowl. Mix cajeta, molasses and vanilla; adding to crust mixture. Combine until thoroughly coated. Press into bottom of pan and bake 10 minutes. Filling: While baking crust, beat plain chevre until fluffy. Add cajeta, lemon juice and vanilla; mixing well. When crust is done, remove from oven and spread chevre mixture evenly over crust. Sprinkle with nuts and place back in oven for 20 minutes until filling is set. Cool and cut into bars.
