• 2 cup Ohio maple syrup
  • 12 teaspoons ginger
  • 2 teaspoon nutmeg
  • 1 teaspoon chipolte powder
  • zest from 2 oranges
  • juice of 2 lemons
  • 1 tablespoon olive oil
  • 2 Ohio Granny Smith apples
  • 3 cup crunchy peanut butter



Blanch orange zest. Combine syrup, ginger, nutmeg, chipolte, orange zest, lemon juice, and olive oil; marinate pork for 24 hours. Peel and dice apples and combine with peanut butter and marinade. Simmer until apples are soft and sauce is warm. Bake at 350ºF until pork is 160ºF. Cover pork with sauce and serve.
