• 1 11-ounce package butterscotch flavored chips
  • 1/2 cup soy margarine
  • 2 cups firmly packed light brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup soy flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt



Preheat oven to 350ºF. In small microwave bowl, microwave half of the chips on high 1 minute until chips melt. In large mixing bowl, cream soy margarine and add brown sugar. Add eggs one at a time; beating until fluffy. Add vanilla and mix in melted chips. Combine flours, baking powder and salt and add to creamed mixture. Add remaining chips and stir into batter. Mix well. Spread into well-greased 13×9-inch baking pan. Bake 35 to 40 minutes. (This is a moist brownie.) Glaze: 1/4 cup soy margarine, melted 11/2 cups confectioners? sugar 1 tablespoon soy milk 1/4 cup roasted soy nuts, chopped (optional) In medium bowl, blend margarine, confectioners? sugar and milk until smooth. Spread on warm brownies; sprinkling with soy nuts.
