Serves 6 to 8

Ingredients

  • 2 cups Ohio chicken, cooked and diced
  • 1/2 cup Ohio celery, diced
  • 2 cups Ohio apples (one red and one green), diced
  • 1 can pineapple tidbits, drained
  • 1/2 cup red grapes, halved
  • 1/2 cup walnuts, chopped
  • Place in ingredients in large bowl
  • tossing well. Chill while making dressing.
  • 1/2 cup mayonnaise
  • 3 tablespoons spicy brown mustard
  • 4 tablespoons Ohio honey
  • Ohio lettuce leaf
  • Blend well with a whisk and toss with salad ingredients. Chill at least one hour, before serving on a chilled salad plate lined with a leaf of lettuce.
  • Chunky Apple Molasses Muffins:
  • 2 cups flour
  • 1/2 cup Ohio milk
  • 1/4 cup sugar
  • 1/3 cup molasses
  • 1 tablespoon baking powder
  • 1/4 cup oil
  • 1 teaspoon cinnamon
  • 1 large Ohio egg
  • 1/4 teaspoon salt
  • 1 Ohio apple, peeled, cored and chopped

Instructions

Preheat oven to 450°F. Prepare 8 muffin pans. Combine flour, sugar, powder, cinnamon, and salt. Add the apple; stirring well. In separate bowl, combine milk, molasses, oil, and egg. Stir in dry ingredients, just until blended. Fill muffin pan cups with batter. Bake 5 minutes, then reduce heat to 350°F and bake 12 to 15 minutes longer or until center of muffins spring back when gently pressed. Cool muffins in pan for 5 minutes. Remove to cooling rack to cool completely.
