Serves 8 to 10

Ingredients

  • 3 cups Belgian waffle mix
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ginger
  • 1 1/2 cups water
  • 2 Ohio eggs, beaten
  • 4 tablespoons Ohio butter, melted
  • 1 teaspoon vanilla
  • 1/3 cup pecans, chopped
  • 1/3 cup raisins
  • 1 cup Ohio carrots, finely shredded
  • 1/2 gallon Velvet Butter Pecan ice cream
  • real Ohio maple syrup

 

Instructions

Preheat waffle maker. Mix dry ingredients together, add water and eggs. Mix until just combined. Continue mixing; adding butter, vanilla, nuts, raisins, and carrots. Do not over mix. When waffle maker is hot, spray with vegetable oil. Prepare waffles according to waffle maker manufacturer’s direction. Keep waffles warm. Serve with small scoop of butter pecan ice cream and drizzle with real Ohio maple
