• Crust:
  • 11/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter or margarine, melted
  • Filling:
  • 16 ounces Caprine Estates Plain Chevre
  • 1/2 cup sour cream
  • 1/2 cup sugar
  • 1 tablespoon vanilla
  • 11/2 teaspoons lemon juice
  • 3 eggs



Crust: Preheat oven to 375ºF. Grease 9-inch springform pan. Mix together graham cracker crumbs, sugar and melted butter. Press crumb mixture firmly into bottom and up side of pan. Bake 6 to 8 minutes and cool. Turn oven down to 350ºF. Filling: In large bowl, combine chevre, sour cream,sugar, vanilla and lemon juice. Mix in one egg ata time, making sure to mix well after each egg. Pour mixture into pan. Wrap pan around edgeswith aluminum foil to avoid browning. Bake 30to 35 minutes. Remove foil and bake another 20to 30 minutes, until set. Remove from oven andcool. Serve cheesecake plain or add your favoritetopping. Crust Variation Instead of graham cracker crumbs use thin mintcookie crumbs. Filling Variations (add to filling mixture) 1/2 cup mint chocolate chips 1 cup assorted candy 1 cup fresh or frozen fruit
