Ingredients

  • 1 pound beef tenderloin, cut into 1-ounce cubes and pounded out
  • Indonesian Marinade:
  • 1 cup soy sauce
  • 1/3 cup lemon juice
  • 2 tablespoons garlic, minced
  • 1/3 cup vegetable oil
  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 1/3 cup water
  • 2 tablespoons chives, minced
  • P-Nut Dressing:
  • 1/4 cup peanut butter
  • 1/4 cup chicken stock
  • 1 cup soy sauce
  • 1/8 cup sesame oil
  • 1 tablespoon red wine vinegar
  • 2 teaspoons sugar
  • 1/2 tablespoon ginger, minced
  • 1/2 tablespoon garlic, minced
  • 1/2 tablespoon red hot sauce

 

Instructions

Indonesian Marinade: Mix all ingredients until blended well. Pour over beef skewers and marinate for 15 minutes. Discard left over marinade. P-Nut Dressing: Use bar blender to purée all ingredients; mixing well until smooth. Grill skewers over medium-high heat until cooked through. Drizzle with P-Nut Dressing and serve.
